Via Cibo to Open in Edmonton, AB

Sherwood Park is the Next Stop on Crave It Restaurant Group’s Radar

Via Cibo, a unique Italian, fast casual restaurant is set to open its second location outside of Ontario in Edmonton, AB.  On Sunday November 1st, the unique, fast casual Italian restaurant will launch at 222 Baseline Road in the Sherwood Park neighbourhood of Edmonton. Operated by local partners Paul and Roxanna Martins, this will be the third location for Via Cibo, the other two restaurants in Toronto and Calgary, respectively.

From the same restaurant group that brought The Burger’s Priest to Edmonton last March, Via Cibo prides itself on being a chef-driven restaurant, without the full service aspect, yet offering a unique fast casual service model. Paying tribute to slow cooking and creating recipes from scratch with the use of fresh, local ingredients, Via Cibo makes the most refined products affordable and takes a firm “food first” stance.

Via Cibo’s signature item – the Italian Piadina – is a staple of Italian Street Food in Italy, a flatbread originating from the Emilia-Romagna region. For centuries it has been made from simple, fresh, wholesome ingredients. The dough consists of 100% artisan durum wheat flour, cold-pressed extra-virgin olive oil, Mediterranean Sea salt and spring water. The soft dough is gently kneaded and carefully baked to perfection on a terracotta stone right in front of you then generously filled with fresh, local, authentic Italian ingredients. The result is an authentic Italian taste experience that is unique and undeniably delicious.

Other menu items include the Insalata Pollo Balsamico (grilled chicken, baby spinach, cipollini onions, sundried tomatoes, goat cheese, aged balsamic vinaigrette), the Prosciutto E Arugula pizza (prosciutto, arugula, fior di latte mozzarella, slow roasted tomatoes, shaved grana padano cheese, drizzle of fig infused balsamic reduction), Ricotta Stuffed Pasta (Ricotta Cheese, Baby Spinach, Caramelized Onions, Pomodoro, Basil) and the Via Poutine (shredded osso bucco, tuscan fries, fontina cheese). Alcoholic beverages will be sold in house and a brunch will be served on weekends.

The positive reception we’ve received from our other two locations, and the fantastic experience we had last March launching The Burger’s Priest, contributed to our opening in Edmonton.”

The lucky Edmontonians will sample the menu, giving staff the chance to perfect the slow cooking, hand crafted techniques for which Via Cibo is known on October 30th and 31st. Located at 222 Baseline Road in the Sherwood Park area of Edmonton, Via Cibo will be open Monday-Sunday from 11am-10pm.
